Capella Telluride Welcomes Gabriel Kolofon as Executive Chef
TELLURIDE, CO (May 17, 2010) – Capella Telluride, considered among the country’s best new mountain resorts, is pleased to announce the appointment of Gabriel Kolofon to executive chef. Kolofon will oversee Capella Telluride’s three unique venues, including the fine dining Onyx Restaurant, casual Gray Jay Café and elegant Suede Bar.
Kolofon is a long-admired member of the Capella Hotels and Resorts family, heralding from Capella Pedregal, a sister property in Cabo San Lucas, Mexico, where he served as chef de cuisine. His oversight of the resort’s three signature restaurants, Don Manuel’s, El Farralon and Beach Club, was an integral part of the resort’s resounding success following its Summer 2009 opening, and it quickly garnered a place on Condé Nast Traveler’s “Hot List” of best new hotels.

Prior to joining Capella, Kolofon worked the kitchens of top resorts in Cabo San Lucas, Mexico, including Las Ventanas al Paraiso, a Rosewood Resort and The Westin Resort & Spa, Los Cabos. His 10-year tenure in the kitchen began in Argentina, where he is from, and he holds a chefs diploma from The BUE Trainers Institute in Buenos Aires, Argentina.
